Sourdough Passion Fruit French Toast Sticks



Do you have left over Discarded Sourdough Starter Loaf? Make this delicious Sourdough Passion Fruit French Toast! This works with any stale bread really, and the addition of passion fruit juice gives it a different flavor than typical French toast.


Highly debated is the origin of "French Toast", as there were various recipes all throughout Europe and the Roman Empire with different names and similar process. The name "French Toast" was first coined in 17th century England which was brought over to the Americas and thus French That was born. In France however its called, "pain perdu" which simply means "lost bread" which was made with stale bread. As in today's commercial kitchens and bakeries, it was a way of re-using bread that would have normally gone to waste. Basic recipes are simple with dipping slices of bread into a mixture of eggs, milk, vanilla and cinnamon with some sugar. Pan fry the coated slices of bread and you have a wonderful breakfast dish.

My variation uses my left over sourdough bread and adds passion fruit for a unique sweetness to the taste. Its simple to make on a weekend morning and I usually top with freshly whipped heavy cream and sliced strawberries. My family loved this dish this morning and so will you!



The Ingredients


1/2 loaf of Discarded Sourdough Starter Loaf (Or Brioche bread works well too)

3 eggs

123g milk

92g passion fruit juice


1/2 tsp vanilla extract

1 tbsp brown sugar

1 tsp cinnamon

2 tbsp unsalted butter


Optional:

- Whipped Cream

- Slices of Strawberries



The Method


  • Pre-heat your oven to 350°f or if you are me, your Breville Smart Oven Air

  • Grease a large pan with butter (you will bake the toast sticks here first)

  • Lightly beat the eggs on a large bowl

  • add the milk and passion fruit juice

  • add the vanilla extract

  • add the cinnamon powder

  • mix well but do not over beat

  • Slice the bread to ½" thick pieces then cut those into no more than 1" long "sticks"

  • Dunk the "sticks" into the egg mixture and make sure both sides get soaked

  • Layer the pan with each of these sticks and sprinkle the brown sugar over each piece

  • Bake at 350 for 10 minutes

  • Then pan fry until brown in butter

  • OPTIONAL but yummy!: top with whipped cream and sliced strawberries!
